About this selection:
For our Christmas coffee, we have selected a coffee from Finca Las Brisas in El Salvador, produced by Carlos Pola. Coming from a family of coffee producers, he acquired the farm in 1997 before fully dedicating himself to specialty coffee in 2012. Located at an altitude of 1,300 to 1,600 metres, the farm focuses on quality and more sustainable farming practices.
This coffee showcases the H1 and H2 hybrid varieties, selected and adapted to the farm’s microclimate. H2, also known as Catisic, was developed in 1984 by renowned geneticist Angel Cabrera, the “Father of Pacamara”, who dedicated more than 40 years to studying and improving coffee varieties at Finca Las Brisas. H2 is the result of a cross between Caturra and Timor (Catimor) and is particularly known for its resistance to coffee leaf rust.
Processed using the honey method, this lot reveals indulgent notes of caramel, vanilla and blackberry, creating a warm and comforting cup that perfectly captures the spirit of Christmas.
Our tips for enjoying this coffee:
This coffee is wonderfully versatile, ideal for both filter and espresso brewing. Its naturally rich, creamy, and rounded body, along with low acidity, makes it a perfect choice for a balanced and smooth espresso, while its roast allows the subtle nuances to shine through when prepared using brewing methods.
This coffee truly offers the best of both worlds.
