Bring filtered water at a temperature of about 95°C.
Rinse the paper filter with hot water by pouring exclusively in the center of it and discard this water.
Add freshly ground coffee (60g / liter or 30g for 500ml).
› Use a medium-coarse grind.
Pour, evenly, 60ml - 80ml of water for the pre-infusion. After waiting 30 seconds, pour another 150 ml in circles. Gradually and in several installments, add the remaining water, avoiding letting the level drop too low in the filter. It is recommended to filter on a scale for more precision and regularity (1 ml = 1 g).
Filtration should be completed in 2.5 to 3.5 minutes.
› If the filtration is too fast: the coffee is weak in taste.
› If the filtration is too slow: the coffee is too strong and bitter.
