Chemex

  1. Bring filtered water at a temperature of about 95°C.
     

  2. Rinse the paper filter with hot water and discard this water.
     

  3. Add freshly ground coffee (60g / liter or 30g for 500ml).
    › Use a coarse grind, similar to a French press. The coarseness of the grind will depend on the amount of filtered coffee desired.
     

  4. Pour, evenly, 60ml - 80ml of water for the pre-infusion. After waiting 30 seconds, pour another 200 ml in circles. Gradually and in several instalments, add the remaining water to keep the grind as saturated as possible. It is recommended to filter on a scale for more precision and regularity (1 ml = 1 g).
     

  5. Filtration should be completed in 3 to 4 minutes.
    › If the filtration is too fast: the coffee is weak in taste - it is necessary to grind finer.
    › If the filtration is too slow: the coffee is too strong and bitter - you need to grind it thicker.
